Chocolate Orange Cookies Recipe

I have a MASSIVE obsession with anything orange flavoured, orange coloured or orange scented right now. I don't know why and I don't know where its came from. (Im not pregnant so don't worry) I just can't get enough of anything with a bit of orange in, hot chocolate especially.
But recently I rediscovered my love for Terry's Chocolate Oranges and about a week ago before Halloween I came up with the idea of making pumpkin shaped cookies, as they're orange I thought having them orange flavoured too would fit perfectly and be really halloween-y! I did that, but at the same time decided that these would be nice really for any occasion and after having some they were bloody delicious if I don't say so myself. So I quite simply had to share!

Listed below are all the pieces you need to make the recipe! Make sure you have all those and you're good to go!

I did completely by accident include orange Icing because I did intend to Ice some of the normal ones I did for the Halloween ones however but this is completely up to you on how you'd like to decorate them! 

Also amongst these ingredients you will need possibly 2 bowls for mixing, cutlery and an electric whisk (if you don't have one not to worry!)
125g butter 100g sugar

Okay so for the first step your going to want to add the butter in with the White sugar
100g brown sugar

Then add in the Brown Sugar and stir them together. 
For this part I used an electric whisk which helped the mixture come together better and break down some of the brown sugar into smaller, finer pieces. The best way to ensure the sugar is really smooth in the mix is to pour the sugar through a sieve first. Don't worry if you don't have any electric whisk the same can be achieved by stirring the mixture well.

Then next you'll need to add an egg into the mix and stir that in 

175g flour 1/2 teaspoon bicarbonate of soda

25g of cocoa powder

Then add in the cocoa powder

Once you've added all those in you can give it a really good stir! And just make sure everything gets mixed in really well, it should form a really thick paste

For the best part you then chunk in the Chocolate orange to do this I just simply broke them up with my hands, you can do it with a knife or however you wish. The more chunks the better!! 

2 teaspoons of orange extract

For this part it doesn't have to be 2 Teaspoons you can add in as much or as little as you'd like! I wanted it to be very orangy so I added in 2 teaspoons which seemed to work really well.
Just have a little taste of the mixture before you put it in the oven to check its the right flavour you want.

Right so above you'll see that I did a batch with cocoa powder so they are chocolaty and I chose to leave it out the mix too so they just had chocolate orange chunks in. 
You can do the mix either way you like! If you'd like to make the second batch pictured above just  don't add in the cocoa powder and follow all the other steps.

Divide the mixture out on the tray, you can use baking paper, foil or what you like on the bottom. I would advise this because my first lot stuck! Just grease the tray or the paper up with a bit of butter and wipe it all around. Also make sure you leave enough space around the cookies so that they don't all go into one big cookie. If you want that to happen go ahead! 

Bake for 10-20 minutes or until they start to harden up! I put them in for 180C as I have a fan oven. For gas I'd put it on Gas Mark 4

Then that's it there you have it. These really are SO easy to make!
And so delicious too! If you've made cookies before then you can choose to do them the way you feel most comfortable with. The recipe is simple, make cookies and add in chocolate chunks.
Also the final look of the cookies is entirely up to you! If you want to ice them or leave them plain again completely up to you!
